Soak the peanuts in warm water for an hour.

Cut the pork trotters into pieces and wash them.

Boil the water in the pot, pour in the pork knuckles and simmer for a while. Remove and set aside.

Heat oil in a pan and add garlic.

Pour in the pork knuckles, red and green chili peppers and garlic sprouts. Stir fry for a while.

Pour in the drained peanuts, add cinnamon and star anise, salt, dark soy sauce, cooking wine, and rock sugar.

Add some bean paste. Add a little water and simmer for a while.

Pour it into the electric pressure cooker and simmer until cooked through.

When it comes out of the pan, it's fragrant, spicy, and incredibly delicious.
