Stir-fry Sichuan peppercorns, aniseed, cinnamon and bay leaves in cold oil in a cold pan.

Add ginger slices and garlic cloves and saute until fragrant.

Add Pixian bean paste and stir-fry over low heat to produce red oil.

Add lobster tails and sauté for half a minute.

Add dry ingredients (1 tsp salt, 1 tsp thirteen spices, 1 tsp chicken powder) and stir-fry for ten seconds. Humidify the ingredients (2 tablespoons of light soy sauce, half a tablespoon of oyster sauce, 1 tablespoon of steamed fish soy sauce, 2 tablespoons of chili oil, 2 tablespoons of chopped green onion) and stir-fry until coloured.

Add a bowl of boiling water and cook over medium-low heat for five minutes.

Turn off the heat and cover the pot. Soak the lobster tail in the soup for at least ten minutes.
