Fragrant chive pork pie

For women, eating some leeks in an appropriate amount can also whiten and remove freckles, and improve beauty. The pie I made today is a fermented version of the pie filled with chives and pork. The crust has been fermented once, and after frying it is crispy on the outside and soft on the inside, very delicious. This time I used an electric baking pan. If you don’t have an electric baking pan, you can also use a frying pan.

First mix the flour, fine sugar and yeast, then add water in batches and knead the dough with a bread machine (you can use your hands if you don’t have a bread machine) to form a smooth dough. Put the dough into a stainless steel basin, cover it with plastic wrap and ferment at room temperature.

While the dough is fermenting, start preparing the meat filling. Wash the pork, drain the water, and cut into cubes. Wash the leeks and drain the water.

Finely chop the leeks.

Add an appropriate amount of salt to the meat filling and mix well, then add water to the meat filling in small amounts, and stir evenly in a clockwise direction with chopsticks after each addition of water, until the water is completely absorbed by the meat filling. Then add light soy sauce, oyster sauce, ginger juice, cooking wine, pepper, and fine sugar and stir evenly. Finally, pour in sesame oil and stir evenly.

Add the leeks to the marinated meat filling, mix well, and refrigerate until ready.

After the dough has doubled in size, knead it with your hands to press out any big bubbles.

Divide the dough into 12 equal-sized portions.

Pat a little flour on your hands, press the dough into a flat shape, and use a rolling pin to roll it into a thick crust around the middle.

Place the leek meat filling in the middle of the pie crust and shape it like a bun.

Close the mouth downwards.

Wrap the remaining pie crust in turn and let it rise.

After the electric baking pan is preheated, use a silicone brush to apply a thin layer of corn oil, put the pie embryo into the electric baking pan, and press the "Pie" button to start pancakes.

After about two or three minutes, the pie will be fried, and the electric pan will beep. When you open the lid, you can see the fried pie with golden crust, and the aroma will come to your nostrils. It is so delicious.
