Pick and wash the beans, and break the long ones in the middle. Wash the ribs, boil them in a pot of cold water, blanch them, remove the froth, and set aside. Prepare the seasonings such as onion, ginger, garlic, star anise, tangerine peel, cinnamon, nutmeg, bay leaves, etc.

Add cold water to cover the ribs, bring to a boil over high heat, then reduce to low heat and simmer for 30 minutes.
