Blanch the spareribs in cold water until they drain.

Put it into a casserole, add an appropriate amount of water, add onion, ginger slices and star anise and cinnamon, bring to a boil, then reduce to low heat and simmer for 30 minutes.

Stir-fry onions, ginger, garlic and dried chilies in a wok.
