Stir-fried egg and chive buns
Overview
Pied vegetables: Also known as ground fungus, lichen, ground fungus, ground fungus, triptomycosis, ground fungus, sweet potato peel, etc., it is a combination of fungus and algae. Add 285g water and 2g yeast to 500g flour and mix into a soft dough. Ferment until doubled in size and bubbles are filled.

Chop 200 grams of leeks into mince, pick and chop the soaked and cleaned skin several times, squeeze out 130 grams of water, fry 2 eggs and chop them finely. Soak a little vermicelli and cut into 1cm-sized pieces.

Mix several ingredients together. Add a little ginger powder and five-spice powder. Heat a tablespoon of oil in a wok and pour it over the vegetables when the oil is hot. Stir evenly and sprinkle with appropriate salt to combine.

Roll the dough into long strips and cut into 35g pieces.

Take one piece and put appropriate filling into it and press it tightly. Pinch each piece at the beginning of the pie crust, about 1.5 cm apart in the middle.

Take two and fold them in half. Then pinch left and right alternately to form a willow leaf-shaped vein.

After wrapping, dip some flour into the bottom of the bun and place it on the curtain. Cover with a cloth and let it rest until the buns become lighter in size.

Boil water in the pot, increase the heat to medium heat, keep the steam coming out, steam for 13 minutes, simmer for one minute, lift the lid and remove from the pot.
