Beef Stir-fried Loofah
Overview
Beef fried luffa is as famous as beef stir-fried bitter and beef stir-fried vegetable core. They are all well-known old-fashioned Cantonese dishes that are eaten endlessly and have endured for a long time. Therefore, when harvesting luffa, the first thing that comes to mind is beef fried luffa. This year, I finally harvested a decent loofah. Of course, I first made the beef fried luffa.

Slice the beef, add 1/3 tsp salt, 1/3 tsp pepper, 1/4 tsp baking soda. If it feels sticky with your hands, add 1 tbsp of water until the water is absorbed. Add 1/2 tsp of corn starch and spread evenly. Finally, add 1 tbsp of vegetable oil and continue to spread evenly. Let it stand for more than 1 hour or put it in a compact box in the refrigerator overnight, the meat will be more tender;

Cut the loofah into hob pieces and cut the pepper into rings;

Stir-fry the beef over medium heat until it is eighty-nine times cooked;

Wash the pot, put it back on high heat, add oil, add shredded ginger and sauté until fragrant;

) Pour in the loofah pieces, stir-fry for a while, add 1/3 teaspoon of refined salt, 1/3 teaspoon of pepper and 1/4 teaspoon of sugar, and stir-fry the loofah until it is broken;

Pour in the beef and red pepper rings, add 1 tablespoon of cooking wine, stir-fry for a few times, sprinkle in about 1 teaspoon of sesame oil, stir for a few times and remove from the pan.
