For the main ingredient, I forgot about the garlic; I roasted the peanuts in the oven for a few minutes to peel them and make them crispy;

Peel the lotus root, wash and cut into smaller pieces, soak in white vinegar and water to prevent it from turning black;

Cut the lotus root slices and blanch them in boiling water for 1-2 minutes, remove and drain;
