Waterless braised pork (enamel pot version)

There are hundreds of ways to make braised pork. It is a well-known home-cooked dish. The braised pork is cooked in an enamel pot without a drop of water. It is soft, fragrant and waxy, fat but not greasy, and melts in your mouth

Preheat an empty pot over low heat for 2 minutes, wash and cut the pork belly into pieces, drain the water and pour it into the pot. Slowly fry over medium-low heat without adding oil until the oil is forced out and the surface is slightly browned.

Pour in 1 tbsp dark soy sauce and 1 tbsp light soy sauce and stir-fry until the pork belly is colored

Add 6 spoons of Huadiao wine, 1 spoon of rock sugar, 3 slices of ginger, 1 star anise, 2 bay leaves, 1 gram of cinnamon and green onions and stir well

Cover the pot and turn on medium heat

After steam comes out from the side of the pot, pour a cup of water on the pot lid, turn to low heat, and simmer for 45 minutes

After the water on the lid of the pot has evaporated, open the lid, stir-fry for a while to collect the juice, and then close it
