Wash the baby cabbage and cut into long strips.

Cut the preserved eggs into cubes, add some dried shrimps and set aside

Take a section of vermicelli and soak it in hot water

Sauté the diced preserved eggs and dried shrimps in the oil pan until fragrant. The preserved eggs will change color slightly (I should add some shredded ginger, but I forgot to add them)

Add stock or water, I added shrimp heads and chicken racks to make chicken rack soup

After the water boils, add the washed baby cabbage and cook for 5 minutes. Add a little salt. Because there is already salt in the chicken soup, add less salt. The chicken soup is fresh enough, so no chicken essence is added.

Pour out the water in which the vermicelli is soaked and add the cooked baby cabbage. The delicious baby cabbage in soup is ready! The preserved eggs I bought were not particularly well marinated and the color was not very nice.
