Wash the duck and blanch it in cold water.

Heat oil in a pan, add ginger slices and saute until fragrant.

Add the duck and stir-fry to dry out the water, turn to low heat and squeeze out the oil from the duck meat.

Pour in a can of beer. Cook over high heat for two minutes, then cover and cook over low heat for two minutes.

Cut the potatoes into large chunks and set aside.

Add potatoes and cook together.

Add scallions and salt.

Cut mushrooms and red peppers and set aside.

Cook until potatoes are cooked and add mushrooms, light soy sauce and oyster sauce.

Stir-fry for one minute, add the red pepper and stir-fry quickly and you're done.
