Salt and pepper shell flower roll
Overview
Northerners love to eat pasta, and will steam a pot of steamed buns or rolls every now and then. They also like to change the way they make them. The shape of this roll was also taught by my father

Steps
-
Put flour, water and yeast in a basin and mix into a dough of moderate hardness, cover with plastic wrap and ferment at room temperature;
-
The dough is fermented in place. Pull the dough apart to see the honeycomb;
-
Take the dough out to a chopping board and knead it vigorously; knead until the dough is smooth; roll the evenly kneaded dough into a long strip;
-
Divide the dough into 6 parts, cover with plastic wrap and rest for 5-10 minutes. At the same time, prepare two seasoning bowls. Put pepper and salt in one bowl, and add vegetable oil in another bowl
-
After the dough has risen, flatten and roll it out. Apply a thin layer of vegetable oil on the dough, not too much, and then sprinkle with salt and pepper
-
Fold the dough into three parts and mark with a spatula or the back of a knife
-
Pass a chopstick through the dough, twist the dough with both hands, rotate it 360 degrees in reverse, press the chopstick gently on the chopping board, and a flower roll is completed
-
Place the flower rolls on the baking sheet, keeping distance between them; cover the dough with plastic wrap and let it rise for 20 minutes
-
After proofing, put the Hanaki into the steaming oven. On the middle layer, select the pure steam function button, and then select the temperature and time button. The temperature defaults to 100 degrees, so use 100 degrees. Press the temperature and time buttons again, set the time to 22 minutes, press the start button, and the oven starts to work;
-
Take out the baking sheet, pick up the flower rolls and place them in a breathable container
