Wash the pomfret and make cross lines on the belly and back

Onion and ginger slices for later use

Seasoning

Pour a little oil into the pan and heat it up

Add ginger slices and stir-fry until fragrant

Add the pomfret and fry until golden brown on both sides

Pour in the steamed fish drum oil, light soy sauce, appropriate amount of water, some cooking wine and chicken essence and stir-fry evenly. Cover the pot for three minutes, then turn over and continue to stir-fry. Add the green onions and stir-fry for three minutes

When the water is almost done, turn off the heat and serve the pan
