Braised pork trotters

Add rice wine to the pig's trotters and blanch them in water.

After blanching, rinse the pig trotters.

Put oil and rock sugar into the pot, and use a spatula to break up the larger rock sugar particles.

Over medium-low heat, add the pig trotters and stir-fry slowly. Stir-fry for one minute, then add various seasonings and stir-fry.

Add secret braised sauce and stir-fry.

Add enough water at a time, bring to a boil over high heat, then cover and simmer over low heat for about 90 minutes.

After simmering for about 90 minutes, simmer over high heat to reduce the juice. When the juice is reduced, remove from the pot and put on a plate.
