QQ candy jelly mousse
Overview
Mousse cake first appeared in the gourmet capital of Paris, France. Masters added various auxiliary materials to the cream to stabilize and improve the structure, texture and flavor, making the appearance, color, structure and taste richer and more natural and pure. It tastes great when eaten after freezing and becomes the best cake. The first time I made mousse cake, I fell in love with it. The refreshing color, beautiful appearance, and sweet taste are all comparable to the mousse in a cake shop!

The first step is to prepare the ingredients for making the cake. Cake flour, sugar, eggs, butter, milk.

Separate egg yolks from egg whites.

Add 10 grams of sugar to the egg yolks and beat.

Sift in the flour and stir evenly

Mix butter and milk and microwave for 40 seconds until completely melted.

Pour into the egg mixture and mix evenly.

Add the sugar to the egg whites in 3 batches, and beat the egg whites until the egg whites are lifted.

The edges of the inverted egg whites will not flow.

Mix the egg white paste and egg yolk paste and stir evenly.

Pour into molds.

Preheat the oven to 180° for 5 minutes and bake for 15 minutes.

The surface will turn golden and elastic. No need to buckle, just let it cool naturally and you can release it from the mold. Then use the mold to cut into the desired mousse shape.

The second step is to prepare the ingredients for making mousse: 100 grams of QQ sugar, 280 ml of light cream, 20 grams of condensed milk, and 90 ml of boiling water.

First melt the QQ sugar with boiling water, then put it in the microwave for 1 minute until the QQ sugar is completely dissolved in the water.

Then place on bio-ice packs to cool quickly.

Mix the light cream and condensed milk and beat with a whisk until 70% fluffy.

Add the cooled QQ sugar water to the whipping cream in batches.

Mix well. Lubricate the mousse paste.

Wrap the mold in tin foil.

Add the cut cake slices.

Pour in the mousse paste. Place in the refrigerator for 4 hours.

The third step is to prepare the ingredients for the jelly layer: 75 grams of QQ sugar and 70 ml of boiling water. Also melt the QQ sugar with boiling water, then put it in the microwave for 1 minute until the QQ sugar is completely dissolved in the water.

Then place on bio-ice packs to cool quickly. (This time I used strawberry flavored QQ candy for a more beautiful color)

Take out the chilled mousse.

Pour in the jelly water and continue to refrigerate for more than 2 hours.

Take out the refrigerated jelly mousse and carefully unmold it.

Then make a simple decoration, take photos first, and enjoy later. Very delicious.
