  1. Prepare the raw materials in advance, choose the best sour bamboo shoots, and cut them by hand for a better flavor. The soybeans will taste better after soaking them overnight.

Pour a little oil into the pot, and when the pot is hot, add the soybeans and stir-fry until the soybeans are golden brown, then take them out of the pot and set aside (note: stir-fry constantly during the frying process, and control the heat to prevent the soybeans from being scorched until they have small black spots)

  6. After stir-frying the dried fish for a while, add the prepared sour bamboo shoots, ginger, sour chili peppers, and soybeans in sequence, add salt and light soy sauce, and add a few drops of white wine to make it more fragrant!

  7. After stir-frying for a while, add about 50ml of water, cover the pot over medium heat and simmer. After simmering for 5 minutes, you can feel the charming aroma.
