Pork Belly and Braised Sauerkraut
Overview
Our sauerkraut is pickled with mustard greens, so it is sour and salty. It is stewed with pork belly and sugar and goes very well with rice. If you can eat spicy food, add some chili pepper, it will taste better!

Slice the pork belly, chop the pickled cabbage, shred the ginger, chop the scallions and set aside.

Put pork belly in the pot and stir-fry over medium heat to release the oil

Add shredded ginger and fry until fragrant

Add scallions and saute until fragrant

Pour in the sauerkraut and stir-fry evenly

Add a little yellow pepper sauce or 1 fresh yellow pepper

Add 2 tablespoons of sugar and stir-fry evenly

Add 1 tbsp chicken juice

Add 1 bowl of water, bring to a boil over high heat and simmer over medium to low heat for 15 minutes

Stir-fry the excess water over high heat, sprinkle in the chopped green onions, stir-fry well and serve on a plate.
