Use a toothpick to pick out the shrimp sausage, mince the onion, ginger and garlic. Prepare a small bowl and add cooking wine, sugar, vinegar, light soy sauce and a little water to make a juice.

Boil water in a pot, add scallions, ginger slices, and cooking wine, blanch in boiling water for 5 minutes, remove and set aside.

Heat the pan and pour oil, add the onion, ginger and garlic and sauté until fragrant, add the blanched prawns and stir-fry until slightly dry, pour in the prepared soup and stir-fry evenly.

Stir-fry over low heat until the shrimp absorbs the soup and serve.
