Scallion oil chicken
Overview
I use an old hen to make this scallion oil chicken. Old hens are chickens used to lay eggs. After the old hen is cooked, the skin is springy and the meat is very chewy. People at home like it very much. Since the old hen is not easy to cook, I blanch the old hen in a pot first, then pick up the old hen and then make the scallion oil chicken. In this way, you can drink soup and eat scallion-flavored chicken.

When you buy an old hen, cut its feet, neck, etc., take out the eggs (generally speaking, if you buy an old hen, there will be eggs inside), wash them with clean water and set aside.

After washing the old hen, drain out some water (put ginger, salt, and a little cooking wine into the water).

Prepare carrots, potatoes, old hens, two or three dried mushrooms (soaked), corn and other soup ingredients (I use the old hen to make the soup first, and then use the cooked old hen to make the scallion oil chicken. If you use ordinary chicken, don't use it to make the soup. After cooking it at the second point, soak it in ice water).

Put all the soup ingredients into the rice cooker, add an appropriate amount of water, cover the lid and turn on the heat. After boiling, cook for another 30 minutes. Take out the old hen (if you don’t like chewy meat, cook it for a longer time before taking it out). Continue to simmer the remaining chicken feet and other soup for about 30 minutes.

Cut the old hen into pieces and put it on a plate, pour the cooked soy sauce and sprinkle with the chopped green onions
