Black pepper hairtail fish

Buy fresh hairtail fish and it will taste delicious fried. Frozen ones are not as delicious as fresh ones.

Cut off the fins of the hairtail fish

Wash the black membrane inside the belly and the blood stains near the bones so that it won't smell fishy.

Cut the hairtail into 5--6 cm sections, then cut with a knife on both sides, but do not cut through, so it is easier to savor and looks good when fried

Put the processed hairtail segments into a basin, add onions, shredded ginger, black pepper, salt, and rice wine

Mix well and marinate for 20 minutes

Remove the marinade from the marinated hairtail, dip it in dry starch, and coat the surface with a layer of starch

Leave it for a few minutes to allow the starch to fully adhere to the surface of the fish

Heat the oil to 60% and fry until the surface is golden brown. You can also fry it again.
