Stir-fried spring bamboo shoots with Chinese toon

Thanks to Gourmet World for giving Arowana a try. My family has always used Arowana products, and I feel that the big brands are trustworthy. I once saw a TV report that introduced the entire process of pressing Arowana peanut oil. However, the manpower and equipment used to select and sterilize peanuts are not something that ordinary small manufacturers can do. There are many kinds of oil for arowana, among which fragrant sesame oil is my favorite, especially for salad or stir-fry dishes. Today I fried Chinese toon with sesame oil and then added flavor to the spring bamboo shoots. Haha, it’s fragrant and delicious.

Fresh spring bamboo shoots

When choosing spring bamboo shoots, choose white, tender and fresh cross-sections with small distances between the nodes. Such bamboo shoots will be fresh, crisp and tender.

Peel the bamboo shoots and divide them into two parts: the tip and the root

This dish uses only bamboo shoot tips, sliced lengthwise

Boil in lightly salted water for about 10 minutes to remove the astringency

Put a ladle of soup stock into the pot and add the blanched bamboo shoots

Add appropriate amount of salt

Cook for about 10 minutes to allow the bamboo shoots to absorb the flavor of the broth

Take another pot and add a little arowana-flavored sesame oil

Finely chop Chinese toon

Put the Chinese toon into the pot and stir-fry with sesame oil until fragrant

Pour in the bamboo shoot tips and stir-fry evenly before serving
