Blanch the spareribs.

Boil water in a casserole, add the ribs, green onions and ginger slices, cover and simmer over medium-low heat for half an hour.

Prepare the sauce: 1 tablespoon cooking wine, 2 tablespoons soy sauce (1.5 light soy sauce, 0.5 dark soy sauce), 3 tablespoons sugar, 4 tablespoons vinegar, 5 tablespoons water, and a little salt.

Remove the pork ribs and drain the water. Use the bone broth for other purposes.

Heat a little oil in a pan, add ginger slices and garlic, and stir-fry until fragrant.

Add the pork ribs and fry for a few times.

Pour in the sauce.

Stir and cook evenly, then add a little vinegar and some gravy water at the end. Remove from the pan and sprinkle with cooked white sesame seeds and chopped green onion.
