Overview
Cut fish roe, also called scissor noodles, is a noodle dish from Shaanxi. This staple dish is my specialty. It was taught to me by my mother since I was a snack. It contains meatballs, eggs and vegetables. It has all the protein, sugar, minerals, vitamins and fats that the human body needs. Eating such a bowl of hot noodles in the cold winter, isn't it the best health staple food? Its texture is similar to that of shaved noodles. It can also be fried or eaten cold. Let’s take a look:

Add 2 grams of salt to the flour (the purpose is to make it stronger)

Knead the noodles according to the ratio of one pound of noodles to four ounces of cold water. Add water little by little

The dough that has been kneaded (breaded, hand-baked, and pot-baked) is placed in a plastic bag and left to rest for 20 minutes. Don't make the noodles soft, they will taste similar to knife noodles.

Add appropriate amount of salt, cooking wine, green onion, ginger, light soy sauce, prepare an egg, pour out a little egg white (the egg will be added when the noodles are cooked, don't waste it), and a spoonful of starch.

Use scissors to cut into small fish along the edge, as shown in the picture (this is just for taking pictures, in fact, you can just cut the noodles directly into the pot)

Boil water in a pot and squeeze the meatballs with your hands
