Overview
There is a snack in Taiwan called St. Paul Q-cake. I accidentally ate it and was overwhelmed by its layers of texture. So I decided to try making a replica myself. Unexpectedly, the finished product was quite successful. Not difficult. It’s just that the steps are a bit cumbersome. It turns out that it contains red bean, egg yolk, meat floss and mochi filling. Since my kids don’t like salted egg yolk, I didn’t add it. I replaced the red bean filling with black sesame seeds, which was also good. You can try it if you like.

Mix 150% milk, 20% sugar, 20% sugar until combined. Add 40% glutinous rice flour, 40% cornstarch, 35% cornstarch and stir evenly. Let stand for 30 minutes, then steam for 30 minutes until cooked through. Stir evenly with chopsticks while it's hot, cover and let cool naturally.

Mix everything except the oil dough and knead into a ball. Divide into small doses of 30 grams each. Wake up for 15 minutes.

Wear disposable gloves and knead the mochi dough into small balls of 20 grams each. Divide 15 grams of black sesame balls into each. The meat floss is ready.

Wrap some pork floss in black sesame seeds. Take a mochi dough and flatten it, add an appropriate amount of shredded pork and add a black sesame dough. Wrap with the seal facing down.

When wrapping, slowly push it up with the tiger's mouth. Wrap them in turn.

Take a rested crust, press the middle and bring the two sides together, flatten and roll out. First put some meat floss on the outer skin and then put the filling. After wrapping, flatten gently with your hands. Make into cake dough. Wrap them in turn. At this time preheat the oven to 180 degrees.

Spread the egg yolk liquid evenly on the cake base. Sprinkle with white sesame seeds. Place in the middle rack of the oven. 180 degrees for 30 minutes. After baking, take it out after simmering for 5 minutes.
