Wash the lean meat and garlic and chop into puree. Also chop the green onions.

Peel and cut eggplant into cubes

Add oil to the pot. Fry the eggplant until soft and remove from the pan. Mash the meat and mince the garlic. Pour in the green onion paste and stir-fry until flavourful. Add a little vinegar and two spoons of bean paste and stir-fry until fragrant. Pour in cornstarch and water to make a little cornstarch water and bring to a boil.

Add eggplant and fry together. Add soy sauce to taste and color. Stir-fry and serve.
