Blanch the mung bean sprouts and cool them down.

Soak fungus.

Cut the fungus into thin strips.

Chop the cilantro into pieces.

Put the bean sprouts, fungus, and coriander together and add sesame chili oil.

Add a little light soy sauce and an appropriate amount of rice vinegar.
