Wash the eggplant and cut into thick slices, cutting in the middle without cutting.

Chop the meat into fine pieces.

Add salt, cooking wine, soy sauce, onion, ginger, and pepper to the minced meat and stir to form a meat filling; add eggs to the flour and cornstarch and slowly add water and stir to form a paste.

Stuff the eggplant with meat filling

Stuff the minced meat one by one

Dry the eggplant pieces stuffed with meat one by one into the batter

Pour oil into the pot and heat it to 60-70% heat. Fry the battered eggplant pieces one by one until golden brown and take them out.

Remove to a plate and pour in tomato sauce.
