The authentic Longyou pig intestines are filled with pure glutinous rice or glutinous rice flour, but this time I added my own ideas, mixing red beans, peanuts and shiitake mushrooms in it, and also made another spicy version with taro in it. So first soak red beans (at least half a day) peanuts and dried shiitake mushrooms

Soak the glutinous rice for half an hour. After soaking the peanuts, remove the outer layer. Soak the mushrooms, wash and cut them into cubes. Drain everything, put half of the glutinous rice and peanuts, red beans and mushrooms into a container

Add salt, dark soy sauce, white sugar and MSG, stir evenly, and leave for half an hour to taste

Cut a section of pig intestines and tie the bottom with cotton rope. Then take a funnel at the other end and stuff the mixed glutinous rice into it. I couldn't find a funnel at home, so I cut out a mineral water bottle.

Do not fill the jar too full, as the glutinous rice will swell and burst after cooking. The can is eighty percent full, and the head is tied tightly with cotton rope. Fill all the pig intestines into the pot, add ginger, garlic, fennel cinnamon, cooking wine, salt, MSG, sugar, and oil and cook.
