Overview
Laoyou is a specialty of Nanning. Laoyou noodles, Laoyou stir-fried noodles, fried snails, etc. are mainly made with sour bamboo shoots, sour rice, chili peppers, and tempeh. The taste is sour and spicy. The stir-fried snails I made today have some slight changes. They do not add tempeh and chili peppers. It is just suitable for personal taste adjustment

Wash the snails and marinate them with 30 grams of salt for 20 minutes. Then clean them again. Blanch the snails in boiling water. Remove from the pot and set aside for about 1 minute. Add water to prevent so much water from being released during the frying process that affects the taste
