Mix the medium-sized dough ingredients evenly (do not need to reach the expansion stage), refrigerate and ferment for more than 13 hours. I always refrigerate the dough the night before (you can also ferment it at room temperature to double the size). Tear the fermented medium-sized dough into pieces and mix it with the main dough ingredients except butter to form a smooth dough. Then add butter and knead until the expansion stage.

Ferment at room temperature until it doubles in size, take out and divide into two parts, deflate and round, and let rest for 15 minutes.

Drain the water from the canned yellow peaches, cut into appropriate slices and dices, and use absorbent paper to absorb the water. Soak the dried cranberries in warm water until soft, drain the water and set aside (this can be prepared while the dough is fermenting)
