Spicy shelled lettuce with broken ears
Overview
Zheergen is a particularly popular cold wild vegetable in my hometown of Chongqing. It usually grows on the edge of moist field ridges or at the foot of hillsides. When I used to go fishing with my husband in my hometown, I liked to go to the edge of the field to pry the roots of the ears, and by the way, I also pried some wild onions. The roots of the ears were mixed with the wild onions, and it tasted so good! I didn’t know how happy I was to see some Fructus Fructus in the market today. I have lived in the north for so many years, and all I have seen on sale before were the roots of Fructus Fructus. This is the first time I have seen Fructus Fructus with leaves for sale. Although the Fructus Fructus I saw is not wild, it is very good to have leaves and roots after all. You can use red oil chili peppers, fresh chili peppers, and paste spicy shells to season the cold folded root root, but the most delicious flavor of the mixed folded root root is the paste spicy shell. The paste spicy shell is a fragrant and spicy condiment made from dried chili peppers. It is also a favorite edible condiment in my hometown of Chongqing. Just pour the dried chili peppers into a dry pot and stir-fry. When the red chili peppers are stir-fried until black and exude the pungent smell of the chili peppers, they are crushed into smaller pieces of chili peppers, which are called Hu spicy shells.

Remove the older roots from the root of the folded ears, then remove the whiskers at the roots, and rinse several times; peel and wash the lettuce, and pick and wash the shallots. (preferably wild onions)

Because it is an artificially cultivated root, the leaves are relatively large, so it needs to be cut into sections; the shallots should be cut into sections, and the lettuce should be cut into shreds, but do not cut it too finely.

Add dried chili peppers to the hot pan.

Fry the dried chilies until they turn black over medium heat.

Turn off the heat, remove the dried chilies and let cool.

Place in a plastic bag and crush into pieces with your hands.

Put the shredded lettuce, shallot segments, and ear root into a large bowl and mix well.

Add three spoons of soy sauce, two spoons of vinegar, one spoon of sugar, half a spoon of pepper noodles, one spoon of pepper oil, and half a spoon of MSG.

Finally mix all the seasonings well. (Mix and eat immediately, otherwise the root of the folded ears will not taste good after being marinated)
