Grilled mackerel
Overview
I eat Spanish mackerel every year, and the most classic methods are stewed, braised, and grilled mackerel for the first time. I bought a 5-pound mackerel a few days ago, cleaned it, and cut it into sections. I ate one fish and three. Use the middle section of the Spanish mackerel, pickle it and grill it.

Steps
-
A big mackerel;
-
Clean the Spanish mackerel, and the blood and water must be washed away, otherwise the fishy smell will be strong;
-
Take the middle part of the Spanish mackerel, cut it into 2 cm thick sections, and lay it flat on a deep plate;
-
Sprinkle with shredded green onion and ginger; sprinkle with freshly ground pepper;
-
Pour in the appropriate amount of Shaoxing wine and the appropriate amount of very fresh soy sauce; sprinkle with the appropriate amount of white sugar;
-
Shake the plate a few times to mix the seasonings evenly, cover with plastic wrap and let it marinate;
-
After marinating for 2 hours, turn the mackerel pieces over and continue marinating. It is better to refrigerate overnight in the refrigerator;
-
Take a spoonful of honey, add a spoonful of cold water and mix thoroughly;
-
Take the marinated mackerel pieces, put them into a non-stick baking pan, and drizzle a little honey water on the surface;
-
The function menu of the oven is set to Roast Up and Down, Meat/Sweet Potatoes, the temperature is set to 220 degrees, and the time is set to 30 minutes; it takes 6 minutes for the oven to preheat to reach the predetermined temperature, the preheating end temperature no longer flashes, and the baking pan is placed in the oven;
-
After 10 minutes, take out the baking pan, turn the fish pieces over, and drizzle a little honey water again;
-
Continue to put the baking sheet back into the oven. When there are 5 minutes left before the end, the light in the oven will turn on, making it easy to check the baking situation. If you see that the baked goods are colored, take out the baking sheet 5 minutes in advance;
-
Take out the grilled fish and put it on a plate, and serve it with home-grown perilla sprouts.
