Prepare the ingredients, peel and slice the winter melon, and wash the clams. I use dried clams, which is easier.

Heat oil in a pan, add onion and ginger and stir-fry until fragrant.

Then add the clam meat and stir-fry quickly, remove and set aside.

Put a little oil in the wok, if you like it lighter, don't add it. The reserved clam meat will have oil. Add the winter melon slices and stir-fry.

Add appropriate amount of soy sauce. Stir fry.

When the winter melon is fried to the right softness, add the reserved clam meat and minced garlic. Stir well and remove from the pan.
