Chive pancake
Overview
I especially like to eat pancakes with minced chives. They used to be mille-feuille pancakes. This time I changed the shape and made pancakes. I picked them up with chopsticks. They were tiny, beautiful and delicious!

Mix the flour and salt evenly and then add water to form a soft and smooth dough. Cover it with plastic wrap and let it rest for 20 minutes

Divide into 4 equal parts

Make 4 pieces of dough into round balls and flatten them

Take a piece of dough and roll it into a large, thin sheet (the thinner, the better)

Brush with a layer of oil, then sprinkle with chopped chives and five-spice powder (you can omit the five-spice powder if you don’t like it, or replace it with pepper powder, which is also very fragrant)

Fold the dough sheet in half and cut it into strips as shown in the picture (be careful not to cut off the edges)

Then open the cut dough pieces

Roll it up along the cut side and roll it into a long strip

Roll up the long strip from one end to the other, roll it into a disk, and let it rest for 20 minutes

Flatten it and roll it into a round cake again

Heat a pan, pour a little vegetable oil, and fry the pancake until both sides are golden brown. (I used an electric pan. If you don’t have an electric pan, you can also pan pan.)
