Weishan Commune Liuyang Cuisine: Braised Fish with Mushrooms and Soybeans
Overview
Shiitake mushrooms, fire-roasted fish, and soybeans are all fresh food, but the freshness methods are different, and after blending with each other, they become one. It goes without saying that Hunan people like to eat chili peppers, but if you add dried chili peppers to long-time simmering, it is recommended to stir-fry them at the end, otherwise the dried chili peppers will become soft and spicy after being stir-fried and then cooked.

Soak the soybeans the night before and soak the roasted fish in warm water until soft.

Wash the mushrooms and cut them into thin slices, mince the ginger, smash, peel and mince the garlic, wash and chop the green onions.

Heat the oil in a pan until it is 70% hot, add the roasted fish and stir-fry slowly over medium-low heat until crispy.

Grill the roasted fish to one side, add minced garlic and ginger and sauté until fragrant.

Add the soaked soybeans and stir-fry for about 4 minutes, add water and simmer for 5 minutes until the soybeans are soft. Then add the mushrooms and fry for 1 minute.
