Wash and cut the hairtail into sections, pour in a small amount of cooking wine and marinate for a while.

Beat two eggs, add a handful of flour, a small amount of pepper and salt, and stir evenly without any lumps. The thickness depends on personal preference, I made it thinner.

Put more oil in the pot. When the oil is slightly hot, coat the hairtail with batter and put it in the pot to fry. Use chopsticks to stir it a few seconds after putting it in to prevent it from sticking to the pan. Turn it over as soon as possible or add more oil to prevent it from sticking to the pan.

Fry the hairtail over medium-low heat until golden brown on both sides.

Take it out and remember to control the oil.
