Prepare all materials;

Soak the ox tail in clean water for several hours in advance, preferably overnight. You can change the water several times in between;

Wash the soaked ox tail, put it into a pot, add ginger peel, a lot of water and a little high-strength white wine, and heat it over high heat;

After boiling, continue to cook over high heat for 5 to 8 minutes, during which time you should skim off any foam;

Take out the ox tail, wash it with warm water, drain it and set aside;

Slice onions and dice tomatoes;

Put a little olive oil in the pot, and when it is 50% hot, pour the onions into the pot;

Stir fry the onions over medium-high heat until the surface is slightly golden, then turn off the heat;

Heat over high heat. After boiling, if there is still foam, continue to skim it off;

Add diced tomatoes;

Heat over high heat until the soup in the pot boils and continue to cook for 5 minutes;

Turn to low heat, cover with lid, and start to simmer slowly;

After about 2 hours, open the lid, add the cut corn, and continue to simmer on low heat for 1.5 to 2 hours;

Put chopped coriander in a small bowl;

Add appropriate amount of salt;
