  1. Wash the duck and use half a tablespoon of dark soy sauce to spread the surface of the duck evenly (to help with coloring) and place it in a steel plate (or baking pan).

  2. Place in the middle rack of the preheated oven at 185 degrees for 10-15 minutes, and bake until oil appears on the surface of the duck.

  4. Put the roasted duck into a deep pot, add the onion, ginger, garlic, chili pepper, and star anise. Pour in the beer, light soy sauce, half a tablespoon of dark soy sauce, and rock sugar.

  5. Cover the pot, bring to a boil over high heat, then reduce to low heat and simmer for about 50 minutes. During this period, turn the duck over 2-3 times. When the soup is slightly thickened, take the duck out, cut into pieces and put on a plate. Reduce the remaining soup in the pot over high heat and pour it over the duck. Remove the duck in advance to avoid burning the pot while collecting the thick soup.
