Overview

The old-fashioned bread that’s taking the internet by storm – one of my family’s favorite breads! Use a bread machine to make it, change the recipe, and operate it with one click. You can roll it out and shape it in the middle without worrying about trouble. It is easy to make and tastes just as good!

  1. In the order of liquid first, then powder, and finally yeast, put the starter ingredients: 140g high-gluten flour, 60g low-gluten flour, 16g fine sugar, 160g milk, and 4g quick-rising yeast powder into the bread barrel of the bread machine;

  2. Start the "Dough Mixing" function, stir the ingredients into a dough, and then press "Stop";

  3. Start the "fermentation" function, cover the lid of the bread machine, and ferment until the dough reaches its maximum size and begins to collapse, and the interior is covered with "honeycombs";

  4. Add all dough ingredients except butter, 140g high-gluten flour, 60g low-gluten flour, 64g fine sugar, 1 tsp salt, 16g milk powder, 60g whole eggs, 36g milk. Add milk first, then add whole eggs, salt and sugar;

  5. Add more flour and milk powder;

  6. Start the "Kneading" function, open the lid and knead the dough until the program ends,

  7. After the "dough kneading" is completed, add softened butter, select the one-touch bread program, determine the weight and browning, and press the "Start" button. If you are too "lazy", just go and play until the bread machine program ends and you are asked to perform step 16.

  8. I overcame it, opened the lid of the bread machine when kneading the dough, and closed the lid during fermentation. After the fermentation was completed, the bread machine finished mixing for the second time, "I" pressed the "pause" button, took out the dough, rounded it, divided it into four portions, covered it with plastic wrap and let it rest for 15 minutes;

  9. After resting, roll the dough into four long strips, about 30 to 40cm long;

  10. Arrange the four noodles crosswise in the middle;

  11. Each two pieces are crossed and stacked in the same direction;

  12. Stack again in the opposite direction; repeat steps 11 and 12 until the noodles are stacked to the end (usually three times, up to four times);

  13. Tuck the edges toward the bottom to form a round ball;

  14. With the bottom facing down, put it into the bread bucket, cover the bread machine lid, and continue the bread machine program for the second fermentation;

  15. After fermentation is completed and before baking begins, press the "Pause" button, brush the surface with a layer of whole egg liquid, close the lid, and continue the bread machine program for baking;

  16. After baking, take out the bread immediately, place it on a wire rack, and brush the top and sides with melted butter while it is still hot. You can brush it several times.
