Wash the eggplant

Peel and cut into pieces and add a little water (the purpose is so that the eggplant can be coated with starch)

Then add starch

Mix well so that each piece of eggplant is coated with a thin layer of starch

Chop onions, garlic, carrots and green peppers and set aside

Prepare the bowl sauce: soy sauce, vinegar, salt, chicken essence, cooking wine, peppercorns, water, starch

Pour oil into the pan and heat it

Add eggplant cubes and fry

Fry over high heat until cooked and set aside in a basin

Heat oil in another pot, add onions and garlic and sauté

Add carrots and green peppers and stir-fry

Pour the juice into a bowl and bring to a boil

Add the fried eggplant, stir-fry evenly and take it out of the pan
