  1. Cut off the shrimp whiskers and wash them.

  2. Wash and drain the ginger, onions, garlic, Sichuan peppercorns, and chili peppers.

  3. Add an appropriate amount of salt to the pot, then add ginger, green onion, pepper and other seasonings and stir-fry until fragrant.

  4. Add shrimp and stir-fry.

  5. Stir-fry until the shrimp changes color, add cooking wine, vinegar, light soy sauce, dark soy sauce, and sugar and stir-fry.

  6. Add appropriate amount of water, bring to a boil over high heat and cook for 7 or 8 minutes.

  7. Sprinkle with chopped green onions and turn off the heat.

  8. Finished product is plated.
