-
Cut the pig's trotters into pieces and soak them for fifteen minutes, then wash and set aside.
-
Put the washed pig's trotters into a pot of cold water and bring to a boil.
-
After boiling, skim off the foam and cook for five minutes.
-
Take out, wash and set aside

Heat the oil in the pot, add star anise and stir-fry
-
Add sugar and stir-fry until the color is slightly yellow.
-
Pour in the blanched pig trotters and stir-fry
-
Stir-fry until the pig's trotters change color. Add cooking wine and soy sauce and continue stir-frying until the soy sauce is absorbed on the pig's trotters.
-
After stir-frying, pour boiling water (add enough at one time), add green onions, ginger slices, cinnamon, peppercorns, bay leaves, rock sugar, cover the pot and simmer for about 40 minutes.
-
After simmering, remove the onions, ginger, and spices and do not overheat to collect the juice.
