Chop the chicken into small pieces, wash the green onion, and cut the ginger into pieces. Put it into a small pot with the chicken, add soy sauce, pepper, and cooking wine, mix well, and marinate for 30 minutes.

Cut the green pepper into sections, peel the garlic, and prepare to soak the pepper and watercress.

Put appropriate amount of oil in the pot, add garlic cloves and fry until fragrant.

Add the chicken pieces (remove the onions and ginger before frying) and saute until fragrant and change color.

Add cold water to cover chicken. After the fire comes to a boil, turn to medium heat and cook uncovered until half of the water is left. Add green peppers, ginger slices, spicy bean paste, and pickled peppers. Cook until the water is almost gone. Remove from the pot and put on a plate.
