Defrost the headless three-toothed fish, wash it, dry it, and apply a thin layer of salt on the inside and outside.

Ginger and onion are ready.

Mix the sweet and sour sauce ingredients and set aside. (The taste can be adjusted according to your own taste.)

Heat the oil in a pan, dry the fish again with kitchen paper, put it in the pan and fry over high heat until golden.

Flip and fry.

Add ginger slices and fry.

Pour in the sweet and sour sauce and bring to a boil, then reduce to low heat and simmer for 6-7 minutes. (Cover the lid and cook)

Open the lid and reduce the juice over high heat.

Add the scallions and cook for about 1 minute until the scallions are fragrant.
