  1. Thaw hairtail, wash and cut into sections

  3. Put an appropriate amount of oil in the pot. When the oil is 60% hot, put the hairtail in the pot and fry over low heat until both sides are slightly brown

  5. Rinse the pot and add oil again, add garlic and sauté until fragrant, add salt, light soy sauce, sugar, oyster sauce and water and mix well

  6. Add the hairtail and bring to a boil over high heat, then reduce the heat and simmer until the hairtail is fragrant
