Rub the fish head with salt, cooking wine and white vinegar (it can remove the fishy smell)

A piece of soft tofu.

Heat the oil in the pan and add the fish head.

Fry until both sides are brown.

Add wild pepper and appropriate amount of water (add enough water at one time)

After the water boils, cover the pot and cook (to remove the fishy smell)

Cut the soft tofu into cubes and put it into the hot pot.

Pour the fish soup from the pot into the hot pot.

Put it in the hot pot and continue cooking.
