Wash fresh pork chops. We use pork short ribs as the raw material for this dish because they are relatively thin. It is easy to fry until cooked through, because this dish is fried raw and cannot be blanched. We add a handful of starch and knead repeatedly. Wash the ribs and set aside.

Add bacon powder. Because I made it with ready-made marinated meat powder, if you don’t like the taste of marinated meat powder, we can directly use light soy sauce, dark soy sauce, oyster sauce, and white sugar for marinating.

Add onion, ginger and garlic. Add a little oil and mix it evenly. Marinate for three hours. It must be marinated to get the flavor.

In the middle of the process, we kneaded it repeatedly with our hands and turned it over with chopsticks to enhance the flavor.

Ready-made crispy fried chicken powder. This supermarket sells them all, very cheap. Add the egg white of one egg. Don't waste the egg yolk, we can put it into the ribs to marinate.

Add appropriate amount of water. Make it into yogurt. The paste for this dish needs to be a little thinner.

We take out the marinated ribs and remove the onions, ginger and garlic. Add it to the batter and marinate for ten minutes, stirring evenly so that every piece of ribs is coated with the batter.

Put oil in the pot. Use chopsticks to test the oil temperature. It should bubble when you put the chopsticks in.

We need to put this type of ribs in piece by piece, don’t pour them in all at once. After putting it in, we turn to medium heat.

After setting, turn over and fry again.

Turn over every half minute. Just fry it for 4-5 minutes.

Remove the oil from the pan. Add your favorite seasonings. I used ground cumin and cayenne pepper.
