Stir-fried Coprinus Mushrooms
Overview
One of the delicacies of vegetarian dishes, the smoothness of Coprinus comatus is mixed with the fragrance of green peppers and carrots and stir-fried together to create a delicious home-style stir-fry, which goes very well with rice!

Blanch the Coprinus comatus in advance to drain and set aside.

Carrot cut with diagonal knife.

Heat oil in a pan, add chopped green onions and saute until fragrant, then add carrots and stir-fry.

Stir-fry the carrots for 2 minutes and add the green chili and drumstick mushrooms.

Then stir-fry over high heat for 2 minutes.

Add seasonings to taste.

Plate.
