Braised Pork Trotters with Pickled Peppers

There are many ways to make pig's trotters. I have also made a lot of pig's trotters. Today I want to make a different kind of pig's trotters. It tastes very good!

First, select the pig's front hooves, burn the pig's trotters to remove the hair, then soak them slightly in water and scrape them clean, and finally chop the pig's trotters into pieces.

Put the cold water of the pig's trotters into a pot, bring to a boil over high heat and add white wine to cook the blood.

Remove the pig's trotters and wash the blood with hot water.

Cut the pickled ginger and pickled peppers, and prepare green onion knots, old ginger, aniseed, Sannai, and bay leaves.

Pour rapeseed oil into a hot pan. When the oil is hot, add peppercorns, old ginger, garlic, pickled ginger, pickled peppers, sugar, spices, and Pixian bean paste. Stir-fry over low heat until red oil comes out.

Then pour in the pig's trotters and onion knots.

Stir-fry evenly, add two spoons of white wine and one spoon of pepper noodles and stir-fry over high heat until fragrant.

Add boiling water to cover the pig's trotters and bring to a boil over high heat.

After boiling, pour into a casserole and simmer over low heat.

Simmer over low heat for about two hours.

Remove the pig's trotters to a small casserole and filter the soup. (The small casserole must be scalded with boiling water in advance)
