Stir-fried yuba with leek and moss
Overview
In summer, tender chives are the most popular item on my dining table. This time, I paired it with yuba, and the flavors of the two blended together quite well.

Wash the leek moss, remove the flowers and cut into inch sections.

Cut the soaked yuba into long strips.

Cut ham into strips.

Pour a little oil into the pot, add the yuba and stir-fry for a while.

Add ham sausage and stir-fry.

Add oil to another pot, add leek and stir-fry.

When the leek becomes soft, add the fried yuba and ham.

Add salt and oyster sauce to taste and serve.
